The Best Banana Bread

I have tried a couple of different banana bread recipes over the last couple of years and I have finally figured out the perfect recipe.

It has great flavor and it has a crumble on it, which makes it even better! This bread is great for a snack, or even if you want something to pair with your favorite coffee.

For this recipe you will need:

1 Egg

1 tsp Baking powder

1/2 tsp Baking soda

1 1/2 tsp Cinnamon

2 1/2 Cups flour

1/2 Cup confectioners sugar

1/2 tsp Salt

1 Cup sugar

1 tsp Vanilla

2 Overripe bananas

3/4 Cup unsalted butter

1/2 Cup buttermilk

You will want to preheat your oven at 350 degrees.

To make it:

You are going to mix sugar, egg, and vanilla. Once combined, slowly add 1/2 cup of softened butter. Once it is smooth, add the bananas and buttermilk. (I have often made my own buttermilk if I don’t have any at home).

In another bowl, mix 2 cups flour, baking soda, baking powder, 1 teaspoon cinnamon, and salt. Once everything is combined, slowly stir your dry ingredients into the wet ingredients. Mix until everything is fully incorporated.

Crumb topping:

In a separate bowl, mix confectioners sugar, 1/2 cup flour, 1/2 teaspoon cinnamon, and 4 tablespoons butter. You can use a spoon to mix it, but I have found that using your hands works the best, that way you can crumble it as you mix the ingredients.

Spray a loaf pan with non-stick spray and pour your batter in. If you are wanting a larger loaf of banana bread, pour all of the batter in one loaf pan. If you are wanting more of a coffee cake, I would use a larger pan, or split the batter between two loaf pans. I have done both, and they both turn out fantastic.

You can now sprinkle your crumb topping over your batter.

You will bake your bread for 45-50 minutes, or until your toothpick comes out clean. If you poured all of the batter into one pan, it may take a little longer. If you split your batter up, or poured it into a larger pan, start checking it around 30-35 minutes.

Add ons:

The great thing about this recipe is that it isn’t like your average banana bread, so you can pretty much add anything you want to it. You can sprinkle confectioners sugar over top of it, maybe more cinnamon, or even an icing-if you want to add icing, just mix 1 tablespoon of milk with 1/4 cup of confectioners sugar. It is completely up to you!
